My version of adobong pusit in coconut milk sauce.

Directions

  1. Combine all ingredients in a deep boiling pot except coconut cream.
  2. Bring it to a boil then lower the heat. Let it simmer until squid is half cooked.
  3. Add the steamed eggplant on top and let it boil again.
  4. Add the coconut cream, simmer for a minute or two then turn heat off.
  5. Let the dish rest for a while as the eggplant absorbs the cream.
  6. Serve with steamed rice.
