  • 21/4 c. whipping cream
  • 1 c. whole lowfat milk
  • 1/4 c. malted lowfat milk pwdr
  • 1 x vanilla bean split lengthwise
  • 5 lrg egg yolks
  • 3/4 c. sugar
  • 2 Tbsp. brandy
  • 1 c. unsweetened cocoa pwdr
  • 1/2 c. sugar
  • 1 c. water
  • 1 Tbsp. instant espresso pwdr
  • (or possibly instant coffee pwdr)
  • 10 ounce bittersweet or possibly semisweet chocolate minced
  • 1/2 c. bourbon
  • 11/2 c. Merlot
  • 1/4 c. sugar
  • 1 c. dry tart cherries
  • Sweetened whipped cream

Directions

  1. For Ice Cream: Whisk first 3 ingredients in medium saucepan to blend. Scrape in seeds from vanilla bean; add in bean. Bring to simmer. Whisk yolks and sugar in bowl to blend. Gradually whisk in warm cream mix; return to saucepan. Stir over medium heat till mix coats back of spoon, about 3 min (don't boil). Stir in brandy; refrigeratetill cool.
  2. Process custard in ice cream maker according to manufacturer's instructions. Transfer ice cream to container; cover and freeze till hard.
  3. For Bourbon Warm Fudge Sauce: Whisk cocoa pwdr and sugar in heavy large saucepan to blend. Gradually whisk in water and espresso pwdr. Whisk over medium heat till mix comes to boil. Remove from heat. Add in chocolate; whisk till smooth. Whisk in bourbon. (Can be made 1 day ahead. Cover; chill. Rewarm over low heat till just pourable.)
  4. For Dry Cherry Topping: Stir wine and sugar in medium saucepan over medium-low heat till sugar dissolves. Add in cherries; simmer till liquid is almost evaporated, about 20 min.
  5. Divide half of warm fudge sauce among 8 c.. Top with a few cherries, then scoop of ice cream. Repeat layering with ice cream, sauce, and cherries. Top each with whipped cream and serve.
  6. This recipe yields 8 servings.
