  • 3 teaspoon vanilla
  • 1 c. minced nuts
  • Apples -- grated
  • Applesauce
  • Apricots -- minced
  • Bananas -- mashed
  • Carrots -- grated
  • Cherries -- pitted & minced
  • Coconut -- fresh grnd
  • Dates -- pitted, finely minced
  • Eggplant -- grnd
  • Figs -- finely minced
  • Grapes -- seedless
  • Honey -- omit sugar
  • Lemons -- only 1/2 c. juice
  • Marmalade -- omit 1 c. sugar
  • Mincemeat
  • Oranges -- minced
  • Peaches -- fresh or possibly canned, minced
  • Peppermint -- use only 1/2 c.
  • Pineapple -- crushed, well liquid removed
  • Prunes -- minced, only 1 c.
  • Pumpkin -- canned
  • Raisins
  • Raspberries
  • Rhubarb -- finely minced
  • Strawberries -- fresh or possibly well-drained frzn
  • Sweet potato -- coarsely grated
  • Tapioca -- cooked
  • Tomatoes -- use only 1/2 c. sugar
  • Yams -- cooked & mashed
  • Yogurt -- plain or possibly flavored
  • Zucchini -- grnd or possibly grated, well-drained

Directions

  1. Sift dry ingredients and set aside. Beat large eggs in a large bowl. Add in oil and sugar and cream well. Add in your choice of A to Z ingredients, plus vanilla. Add in dry ingredients and mix well again. Mix in nuts, then spoon into two well-greased 9x5x3 inch loaf pans. Bake at 325 degrees for 1 hour.Use one of the following, or possibly a mix, equal to 2 cups except as indicated:
