Ingredients

  • 1 teaspoon salt
  • 2 teaspoons ground black pepper
  • 2 cups dried black-eyed peas, picked over and rinsed
  • 4 tablespoons unsalted butter
  • ½ large green bell pepper, seeded and chopped
  • ½ large red bell pepper, seeded and chopped
  • 1 large onion, chopped
  • 4 ounces salt pork
  • 1 Turkish bay leaf
  • 1 cup long grain white rice
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1/8 teaspoon hot red “cayenne” pepper
