Açorda à Alentejana- "Poor Mans' Soup" Recipe

This is a traditional Portuguese dish from the southern Alentejo region. It is rare to find it any where else. Actually it is a soup that was passed down from my grandmother, Avo, and she would tell me that this simple dish is got it's name from poor families that couldn't afford much so they often prepared this as a main meal.

Ingredients

  • 3 garlic cloves, peeled and chopped
  • 1 bunch of cilantro, washed and roughly chopped
  • 2 tsp sea salt
  • 1/3 cup of olive oil
  • 7 cups boiling water
  • A Loaf of day old Portuguese, French or Italian crusty bread, cut into 1 1/2 inch chunks
  • 1/2 tsp ground pepper
  • Hard boiled eggs or poached- if and as many as desired

Directions

  1. Add the garlic, cilantro, salt, olive oil, into a medium size bowl and mix well.
  2. Once it is mixed add the boiling water.
  3. Take your bread, dip it in the soup and then place it on your plate.
  4. Then add your egg, eat the egg and the bread together and...Enjoy!
