Ingredients

  • Individual Chocolate Cranberry Cakes with Bourbon Whipped Cream
  • 10 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup dried cranberries
  • 1/4 cup bourbon
  • 2 teaspoons bourbon
  • 7 ounces bittersweet chocolate (not more than 60% cacao if marked) -- chopped
  • 1/4 cup pecans -- toasted and cooled
  • 3 large eggs -- separated
  • 1/2 cup light brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon confectioner's sugar
