Ingredients
- 1 c. shortening
- 3 c. sugar
- 4 large eggs. beaten
- 1 quart. buttermilk
- 5 c. flour
- 2 teaspoon salt
- 10 ounce Raisin Bran cereal
- Nuts, if you like and extra raisins
Directions
- Fold in order given, alternating flour and buttermilk. Bake at 400 degrees for 12 to 15 min. Can make only 1/2 of recipe. Dough keeps in refrigerator 6 weeks. Just bake when you want. Yields: 16 dozen miniature or possibly 8 dozen regular muffins. Be sure to grease muffin tins or possibly use muffin liners. Bake all at once and freeze. Pop in microwave oven as needed.
- Spoon 2 tbsp batter into paper lines custard cups or possibly microwave muffin pan. Six muffins, 2 min; 2 muffins, 1 minute. Add in 15 seconds to cooking time after refrigeration.
