Ingredients
- 1 (15 ounce) box Raisin Bran (7 c.)
- 3 c. sugar
- 5 c. flour
- 5 teaspoon soda
- 2 teaspoon salt
- 1 c. oil (or possibly melted shortening)
- 1 quart. buttermilk
- 4 large eggs, beaten
- Nuts (optional)
- Additional raisins (optional)
- Grated zucchini (optional)
Directions
- Mix together first 5 ingredients. Add in oil, buttermilk, and large eggs. Add in optional ingredients, if you like.Fill muffin tins 3/4 full and bake at 400 degrees for 15-20 min. Makes 4 dozen regular sized muffins or possibly 2 dozen large muffins.
- Mix keeps for 6 weeks in closed container in the refrigerator and can be baked as desired. Batter will seem thicker when cold but does not need to be thinned.
