  • 6 (6") fajita size flour tortillas
  • 1 3/4 cup refried beans
  • 8 tbs thick and smooth taco sauce
  • 8 tbs chopped green bell pepper
  • 8 tbs chopped red bell pepper
  • 8 tbs (about 3) sliced red onions
  • 1/4 tsp crushed red pepper (optional)
  • 2 cups 4 cheese Mexican blend shredded cheese

Directions

  1. PREHEAT oven to 400° F.
  2. Place tortillas on baking sheet(s).
  3. BAKE for 3 to 4 minutes or until crisp.
  4. SPREAD refried beans evenly on tortillas.
  5. Spread 1 tablespoon taco sauce over beans.
  6. Top with bell peppers, green onions and crushed red pepper.
  7. Sprinkle with cheese.
  8. BAKE for 7 to 8 minutes or until cheese is melted.
  9. Cut into wedges.

    The ingredients are very similar to how I make quesadillas but I really like the idea of first baking the tortilla and then again with the toppings like a Mexican pizza. This sounds much better and healthier than frying the quesadillas in oil.
