Ingredients

  • 2 c. flour
  • 2 tsp baking pwdr
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 c. brown sugar
  • 4 x Large eggs
  • 1 1/2 c. oil
  • 1 c. sugar
  • 2 c. carrots, grated
  • 1 can crushed pineapple, (8 ounce.) liquid removed
  • 1 1/2 c. nuts, minced
  • 1 can coconut, (3 1/2 ounce.) optional
  • 1/2 c. butter
  • 8 ounce cream cheese
  • 1 tsp vanilla
  • 1 lb powdered sugar
  • 1 tsp orange juice, optional
  • 1 tsp orange rind, optional Combine flour, baking pwdr, baking soda, and salt. Add in remaining ingredients, including coconut, if desired Grease and flour three 8-inch pans Bake at 350 degrees for 35-40 min Cold thoroughly before frosting.

Directions

  1. ORANGE CREAM CHEESE FROSTING:Cream butter, cream cheese, vanilla and powdered sugar together and spread on cake.
