10 Easy, 30 Minute Meals to get on the table when you’re in a time crunch!

Hi everyone!

Well, still no baby over here! I stand by, and am mentally prepared for, my months-long prediction of an August 1st birthday, but physically I am so ready to not be pregnant anymore! All weekend I fought a losing battle against my energy reserves, and am pretty much only comfortable when laying down. If I’m up and about for too long my back starts to hurt and, well, all productivity is pretty much lost.

Such is the life of a pregnant person though! I know this will all be a distant memory in a few weeks so I am trying to just keep on keepin’ on. :)

At any rate, although I was napping and taking it easy for a good portion of the weekend, Ben and I did manage to have a few fun moments, including stopping by the Downtown Farmers’ Market one last time before baby on Saturday morning. I know I say this every week, but it. was. PACKED!

We had a cool front move through late last week, and the weather felt so deliciously fall. Everybody and their brother attended to purchase their weekly produce, listen to the bands on each corner play, people watch, and eat, of course!

The line for Pupusas was unbelievably long (and I still have the taste of my last one etched in my brain!) so we stopped by Jethro’s afterwards for brunch. BBQ + brunch? It totally worked. My sweet mountain man enjoyed a bloody and skillet with smoked brisket while I went for classic cinnamon French Toast with a side of bacon and hash browns.

I ate every last drop. Holy unbelievably crispy bacon. Locals: if you’ve never brunched at Jethro’s, I highly recommend!

Sunday I attempted to induce labor by whipping up an eggplant-based dish, as several people recommended that to me last week. Obviously it didn’t work AND the dish ended up tasting terrible. Today I’m trying pineapple, another popular suggestion. Wednesday, a crow bar.

In the meantime, I thought today might be a good day to roundup a bunch of my favorite quick and easy IGE recipes that take 30 minutes or less to prepare. Whether you’re low on energy, short on time, or just wanting a fast recipe to make after work tonight, all of these fresh dishes can be made in 30 minutes or less – most, if not all, with fridge and pantry staples. Might just have to swoop by the store tonight for a few fresh essentials.

Enjoy!

Peach Caprese Salad: I know I just posted this recipe, but it’s worth repeating. Fresh, FAST, and so, so good. I legitimately think about eating this every single night for dinner!

Farfelle with Kale and Bacon: Made with fridge and pantry staples like bacon, garlic, sundried tomatoes, and pasta, you’ll just need some fresh kale to round out this 20 minute supper. Freaking. Amazing.

Southwestern Chicken & Rice Skillet: Skillet meals are my favorite type of meals for when time is of the essence, and laziness is at an all time high. Throw a bunch of yummy ingredients into a skillet, press play, then voila – dinner! This Southwestern Chicken & Rice Skillet is full of filling, good for you ingredients.

Mini BBQ Cheddar Meatloaves: The days of boring, bland, and take-forever-to-bake meatloaves are gone. Studded with cheddar cheese, and flavored with BBQ sauce, this quick and easy recipe has been a hit with both Ben, me, and readers.

Ben’s Bacon, Chicken, and Rice Bowls: Send Ben into the kitchen to make dinner and you never know what he’ll come up with (which I just happen to love!) Once again he knocked it out of the park with this easy Bacon, Chicken, and Rice Bowl. So filling and truly delicious.

Avocado, Mozzarella, and Bruschetta Chicken: Another skillet meal, for the win! Saute chicken, top with pre-made bruschetta sauce and mozzarella cheese, melt under the broiler then drizzle with reduced balsamic vinegar. Fresh and fast.

Creamy Chicken & Herb Skillet: I am not lying when I say this Creamy Chicken & Herb Skillet takes 15 minutes to make. Switch up the cheese to customize it to your liking!

Panera’s Mediterranean Veggie Sandwich: Easy. No Cook. Tastes exactly like the restaurant version (because it’s their recipe!)

Cheeseburger Quesadillas: A great way to use up leftover ground beef. I was surprised by how many people loved these babies. Well…not really – I love ’em too!

Easy Chicken Fried Rice: Get all the flavor of restaurant Chicken Fried Rice, without all the oil and fat! This take-out fake-out recipe is fast and great for cleaning out the fridge and freezer of leftover veggies.

Have a great day!
