Slow Cooked Pork Roast with Vegetables
I spent all day yesterday baking, my annual Christmas bake. 3 kinds of cookies, chex mix and a slow cooked pork roast to start the day. Since we knew we were going to be spending 6+ hours baking away we figured why not put a roast in the slow cooker.
Slow Cooked Pork Roast
- 1 1.5 pound pork roast
- 2 cans of beef broth
- 1 15 ounce can of diced tomatoes (with their liquid)
- 1 8 ounce containers of mushrooms
- 1 small bag baby carrots
- 5-6 red potatoes, quartered
- 1 onion, roughly chopped
- 1 clove garlic, chopped
In a crock pot on high, add pork roast, broth, diced tomatoes, mushrooms, carrots, potatoes, onion, and garlic.
Cook on high for about an hour. Turn to low and cook for additional 6 hours. Season with salt/pepper.
A good Sunday night dinner with a La Cave 2002 Merlot. Feels go to be home
