Mashed Potatoes with Caramelized Onions and Cabbage Recipe
I am beginning to think, most of my recipes, are determined by what is hanging around (almost) too long. I had a partial bag of shredded cabbage in the refrigerator and some potatoes that looked like the enemy. I also have a few huge onions from Passover still waiting to be rescued from the onion bin. This was go be the basis for my side dish, for dinner.
Mashed Potatoes with Caramelized Onions and Cabbage
- 3 large potatoes, peeled and chunked
- 2 cups shredded cabbage
- 1 onion, thinly sliced
- 1/2 cup cream cheese
- 1/4 cup sour cream
- 1/4 teaspoon black pepper
Place potatoes into a pot of boiling water. Cover, reduce heat, and simmer 30 minutes. Drain.
In a large skillet in a tablespoon of olive oil, cook onions and cabbage, mixing several times until golden. (20 minutes)
Using an ice cream scoop or half cup measuring cup, place scoops on dinner plates. Top with paprika or parsley.
