A properly stuffed turkey! Recipe

Roasted stuffed turkey
So, I’m closing the year with this flavorful recipe that also fits just fine for the traditional new year’s dinner tomorrow. I hope you enjoy in family and that your night is filled with laughs, happiness, affection, good desires, prosperous plans, warm hugs and juicy bites!
1 turkey of 15 lbs.
1 tbsp. paprika.
1 spoonful of cayenne pepper.
7 tbsp. salt.
7 tbsp. garlic paste.
3 spoonfuls of black pepper.
5 spoonfuls of milled oregano.
1 cup of sour orange juice.
¼ cup olive oil.
Ingredients for the stuffing
5 medium potatoes cut in squares
1 big onion cut in squares.
1 big sweet pepper cut in squares.
½ pound bacon in squares.
½ pound sausage (I use longaniza in my original recipe but It might be hard to come across)
Mix all the seasonings and season the turkey well making emphasis in the interior and putting abundant season in holes that you will make under the wings and thighs.
To roast it, first stuff the cavity with the stuffing ingredients. It is not necessary to season any more, because the juices and fat of the turkey will be enough.
Preheat the oven to maximum temperature for about 5 minutes.
Cover the turkey totally with aluminum foil and put in the oven. Leave the temperature at the maximum for 15 minutes. Then lower the temperature to the minimum temperature of your ovens (About 125 degrees) and allow to cook some 4 hours. After that time, raise the temperature to 175 degrees and leave two more hours.
Past this time, uncover, take out the fat and fluid and raise the fire to the maximum so that it gilds. It will take 20-40 minutes.
To prepare the gravy just put it in a pan and let it boil while adding some cornstarch to thicken (usually a tbsp. cornstarch diluted in a cup of water)
