I am having problem with keeping my homemade gravy thick all day. I keep it in a steam table to keep it warm but after a few hours it will get watery.
What is the best way to keep it thick all day?

Thats unusual, historically leaving it out all day make it thick and rubbery. What do you put in it as a thickening agent, flour or cornstarch?

I make my own broth from chicken giblets and beef bone than make a roux 1 to 1 flour and fat cooked on medium and than add to my broth. My gravy is nice and thick but after being in the steamer it becomes very watery after a while.I don't use cornstarch here in Costa Rica it doesn't work as well as the brands in Canada. Is there any other thickner or can I use such as instant potatoe and will it change it's taste.

You could try Arrow Root as a thickening agent.
