This comes as a memory as a teenager working at a seafood rest.
The best i can remember is some of the ingredients.
Served chilled.... boiled shrimp and vegis in a Italian type Dressing. Literally floating... mushrooms probably water chestnuts, red peppers. I thought it was called something like tahitian salad?
Ringing any bells?
I don't see the mushrooms in this, but some citrus would be interesting, orange segments, maybe lychees and a squeeze of lime juice.
