2/3 cup olive oil, divided
2 tbsp lemon juice
salt and pepper
2 shallots, minced
2 cloves garlic, minced
2 tbsp red wine vinegar
2 lbs ripe heirloom or cherry tomatoes 1/2 inch dice
3 tbsp julienned basil leaves, extra for serving
20-25 toasted diagonal baquette slices, toasted
2 tbsp toasted pine nuts,
