I come from a family that raised some of our own meats and hunted wild game. This is what meat tasted like when I was a kid-rich and full flavored. The pork is well marbled, juicy and tender with a slight brininess. And after 18 years in the restaurant business I've never tasted better lamb-again well marbled and tender. Some green bean salad with mint and grilled lamb chops...watch out!
