,%20the%20preparation%20of%20the%20soup%20(in%20the%20pumpkin%20shell),%20and%20the%20spices%E2%80%94particularly%20piment%20d%E2%80%99Espelette.%20%20%20I%20had%20no%20idea%20what%20this%20was%20but%20I%20gathered%20it%20was%20probably%20some%20sort%20of%20paprika.%20%20%20%20According%20to%20Bon%20Appetit,%20the%20description%20of%20this%20spice%20is%20%E2%80%9Ca%20%20course%20chili%20powder%20made%20from%20the%20Espelette%20pepper.%E2%80%9D%20%20%20The%20Esplelette%20pepper%20is%20only%20grown%20in%20the%20French%20town%20of%20the%20same%20name.%3C/p%3E%3Cp%3ENot%20having%20the%20time%20to%20travel%20to%20Espelette%20to%20pick%20up%20a%20jar%20or%20even%20mail%20order%20this%20spice,%20I%20substituted%20sweet%20smoked%20paprika.%20%20%20And,%20of%20course,%20I%20swapped%20out%20the%20pumpkin%20for%20sweet%20%E2%80%98taters!%3C/p%3E%3Cp%3ESweet%20Potato%20Soup%20with%20Fennel%20and%20Paprika%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20large%20sauce%20pan.%20%20%20Add%20onions%20and%20saute%20until%20they%20are%20colored%20a%20bit.%20%20%20Add%20garlic%20and%20fennel%20seeds%20and%20saute%20for%20about%201%20minute%20(or%20until%20fennel%20is%20fragrant).%20%20%20Add%20a%20bit%20of%20chicken%20stock%20to%20deglaze%20pan.%20%20Stir%20to%20remove%20all%20the%20brown%20bits%20from%20the%20onions.%20%20%20%20Add%20rest%20of%20chicken%20stock,%20sweet%20potato%20puree,%20bay%20leaf%20and%20paprika.%20%20Stir%20(or%20whisk)%20to%20incorporate.%3C/p%3E%3Cp%3ELet%20simmer%20for%20at%20least%20thirty%20minutes.%20%20%20Remove%20bay%20leaf.%20%20(At%20this%20point%20you%20could%20puree%20the%20soup%20if%20desired.)%3C/p%3E%3Cp%3EPlace%20croutons%20into%20individual%20oven-proof%20soup%20bowls.%20%20Ladle%20soup%20over%20croutons%20and%20top%20with%20a%20slice%20of%20cheese.%20%20%20Place%20under%20broiler%20in%20oven%20until%20cheese%20is%20melted%20and%20browned%20a%20bit.%3C/p%3E%3Cp%3EServe.%3C/p%3E%3Cp%3EThis%20is%20a%20great%20soup.%20%20Hubby%20even%20liked%20it%20and%20he%20is%20tired%20of%20sweet%20%E2%80%98taters.%20%20%20I%20hope%20it%20is%20even%20better%20as%20leftovers%20because%20we%20are%20having%20it%20again%20tonight!%20%20It%20was%20a%20great%20dinner%20with%20a%20salad%20(with%20greens%20and%20radishes%20from%20the%20last%20farmers%20market)%20for%20Halloween%20night.%3C/p%3E%3Cp%3ENote:%20%20Would%20you%20believe%20that%20I%20still%20had%20puree%20leftover%20from%20that%20first%20roasted%20sweet%20potato?%20%20%20Out%20of%20that%20one%20%E2%80%98tater,%20I%20made%20Sweet%20Potato%20Quiche,%20%20Sweet%20Potato%20Waffles,%20and%20then%20this%20soup.%20%20%20That%20was%20a%20lot%20of%20sweet%20potato.%3C/p%3E){kind=link}
